"The Eiswein (Icewine) is a very special wine and one of the top products of our region.
Only healthy grapes can be used for this type of wine. Harvest is usually at night in
the moonlight, or very early in the morning because the temperature hast to be at
least -7°C or 19.4F or lower. At this temperature the water in the grapes freezes, but not the
concentratet sugar-extract. After picking, the grapes are pressed only gently so that
the liquid and very sweet juice is gained wheras the water remains as ice within the
press. Therefore the yield is very low and the wine rare."
And sweet. Eiswein is a dessert wine, made in both red and white varieties, and is about
10% alcohol. Its production is so weather dependent, and the amount of grapes needed to
make even a bottle is so high, that finding a bottle is a rare treat.
